Meanwhile, slice avocado & tomato.
Layer ingredients onto toast in the following order:- Avocado- Oregano, salt, & pepper- Tomato- Spinach

*We love Seedtastic bread by Simply Nature (find it at Aldi's). We have been eating it for years and didn't even realize it was vegan until recently, it just tastes so good that we don't buy anything else!*Since this recipe only uses half an avocado, we save the other half and use it to make guacamole later. Tip: To keep the other avocado half fresh, leave the pit in, squeeze some lime or lemon juice on top, and cover with plastic wrap.*Try adding or swapping ingredients to mix it up. Here are some ideas that we have tried:
Add bacon/turkey bacon & swap spinach for lettuce to create a BLTA.
Take it to the next level by adding a slice of cheese - we love this with pepper jack.
Swap oregano for cilantro for a twist. You can even add a hint of lime for extra guacamole-inspired flavor.
