Ingredients
2ripe bananas*mashed with a fork
1tbspcoconut oilmelted if necessary
2tbspagave nectaror honey
½cupmilk of choiceI used skim milk, but you can use your favorite
1large egg
¾tspvanilla extract
1 ½cuprolled oats
⅔cuphomemade oat flour*or flour of choice
½tspcinnamon
¼tspsalt
1 ¾tspbaking powder
¼cupchopped walnuts*optional

Instructions
Preheat oven to 375º
Combine dry ingredients in a small bowl. (oats, flour, cinnamon, salt, baking powder)
Combine wet ingredients in a separate medium bowl and stir together. (Bananas, milk, egg, vanilla, oil, and agave.)
Add dry mixture and any add ins (walnuts, etc) into the bowl with the wet mixture. Stir until combined.
Use muffin cups or spray muffin tin with cooking spray to prevent sticking. Pour mixture into each cup. For larger muffins, you may choose to make 9 muffins instead of 12.
Bake for about 15-17 minutes, or until toothpick inserted in center comes out clean.
Notes
*Because of the bananas, these muffins are naturally dense and moist. It is best to keep them in the refrigerator. We love to reheat them in the microwave for a few seconds before eating.*The ripeness of the bananas will determine how sweet the muffins are. If the bananas aren’t super ripe, you may want to add a bit more agave/honey. *To make a cheap & tasty oat flour, simply place rolled oats in a food processor and pulse a few seconds until they are ground finely. If not, any flour should work depending on what flavor you want. *These muffins are super easy to customize. You can swap walnuts for your favorite nut/seed or just leave them out. You can also swap them out for a handful of fresh blueberries.
