Grilled Chili Lime Chicken & Vegetables

This grilled chicken is easy to make and bursting with flavor. The chili lime marinade only takes a minute to mix up, and will flavor the whole dish while keeping your chicken juicy.

When it’s sunny and anywhere near 70º, I will find just about any excuse to get outside. Since I have to cook meals for the week anyway, one of my favorite things to do is find ways to incorporate the grill. I love this recipe because it can be made entirely on the grill with very minimal effort… Which means extra time relaxing outside.

Grilling Tips

Make sure the grill is hot before adding the chicken. This will sear the chicken and keep the juices inside (and make some lovely grill marks)

I like to sear the chicken for 3 minutes on each side, then flip and cook each side for another 3 minutes to ensure the chicken cooks evenly. This works best with chicken thighs or thinner chicken breasts, so I slice them vertically before marinating.

If you are making this grilled chicken for meal prep, be sure to let it rest for at least an hour before slicing it. This will help the chicken retain moisture so you don’t end up with dry chicken later in the week.

My favorite thing about this recipe is how versatile it is. Add a tortilla to make delicious grilled fajitas. Or serve with rice and beans for a simple meal. And it’s not only great for meal prep. It can be a weeknight superstar –  easy, healthy, and on the table in under 30 minutes. Just make your Chili Seasoning and cut your vegetables ahead of time, and marinate the chicken up to 8 hours before grilling. 

Use a charcoal grill for that extra smoke flavor.

Grilled Chili Lime Chicken & Vegetables

Equipment

  • Grill basket (for grilling vegetables)
  • Grill (or grill pan if cooking on the stove)

Ingredients

  • 3 large chicken breasts cut lengthwise

Marinade:

  • 1 can diced fire roasted Chile peppers
  • 2 tbsp extra virgin olive oil or oil of choice
  • juice of 1 lime
  • 1-2 cloves garlic fresh, minced
  • 2-3 tbsp fresh cilantro chopped
  • 1 tbsp chili seasoning *See recipe

Veggies:

  • 2 medium bell peppers sliced into strips
  • 1 red onion sliced into strips
  • 16 grape tomatoes I used yellow, but any grape tomatoes are fine

Instructions

  • Mix marinade ingredients together in a bowl or bag. Pour 2/3 of it over chicken, save the rest for later. Marinate at least 20 minutes (up to 8 hours).
  • Meanwhile, slice vegetables.  Add onions, peppers, and tomatoes to a bowl and toss with the rest of the marinade.
  • Preheat the grill or grill pan on medium-high heat.
  • Add chicken and vegetables to grill (or pan if cooking on the stove). Sear chicken, cooking 3 minutes per side. Stir vegetables occasionally. 
  • Lower heat to medium. Flip chicken and cook an additional 3 minutes on each side. Continue stirring vegetables until tender. 
  • Divide onto plates or into containers.  For meal prep, it is ideal to let the chicken rest for at least an hour before cutting up to retain moisture.
